- 15 ml homemade red wine teran liqueur
- 15 ml lemon juice
- 15 ml honey syrup
- 30 ml egg white

In a shaker, combine the gin, teran liqueur, lemon juice, and honey syrup. Add the egg white at the end. Shake well without ice, then add ice and shake again. Strain the mixture twice into a coupe glass without ice. Garnish with a date on a metal cocktail pick and a sprig of thyme. Before serving, grate Parmigiano Reggiano cheese on top.
